Cooking For One

Speedy Lamb Dinner Take 1 lamb chop or 2 depend on size rub chops with sea salt,garlic powder and olive oil, leave to marinate. Meantime in a small bowl combine a small can of chickpeas, some chopped coriander or parsley add 1/4 small red onion finely chopped, some grated lemon rind [ to taste ]2 or 3 cherry tomatoes [ halved ]1 Tbs olive oil and may be some lemon juice,and sea salt toss to combine. Now is time to grill or pan fry the chops, use a very hot grill or fry pan cook chops a few minutes on each side or to your taste! serve it on your favourite plate with the salad on the side. Enjoy! I like to prepare the salad first so it soaks in the flavours, you can use any pulse in this salad, like lentils,or canellini beans. Some times is hard to find small tins of these legumes I usually buy the big tins and freeze the rest for later use and add them to soups or casseroles.

Cooking For One

Easy Soup Place one Massel cube in 1/2 litre of boiling water in a small sauce pan on the stove then add some egg noodles or other small pasta. Add 1 smoked or dry chorizo [ sliced ]let it boil until pasta is cooked to your liking...turn stove off and add some chopped coriander serve and enjoy it! This is a quick, easy satisfying meal for a winter lunch or dinner. I buy egg noodles at the Asian shop they come in clusters I use 1 or 2 clusters for 1 person. Chorizo is the Spanish version of the English sausage.
